Cornbread

The real cornbread is actually a thin corn bread made of corn semolina and water (and some lard, if there is any). Wheat bread used to be a rarity in the past and cornbread was a staple food of a poor Serbian peasant. This pauper’s cornbread is actually the best. When it is well baked, it is almost entirely a crispy crust. Any other sort of cornbread, with wheat or other types flour added, with cheese, eggs or milk is called – prојаrа. Cornbread goes best with cabbage, either raw or sauerkraut.
